
Jen Herman - La Cortadora - is one of the only female Cortadoras Profesional de Jamón in the United States.
After honing her craft in Valencia, Spain, Jen founded La Cortadora to bring one of Spain's most iconic culinary traditions to the United States through live hand-carved experiences.
The name La Cortadora translates to "the female carver." Jen's journey began during a month-long trip to Spain more than 15 years ago. As a longtime vegetarian, Jen was overtaken by the temptation of the delicacy that is jamón ibérico. Suffice it to say, she is now a fully recovered vegetarian. What began as curiosity soon became a passion, ultimately leading her to launch La Cortadora.
Today, Jen combines Spanish tradition, hospitality, and storytelling to create memorable experiences centered around one of the world's most celebrated foods.
When she's not carving jamón ibérico, you'll find her playing polo, paddleboarding in Sausalito, enjoying a glass of rosé in wine country, or traveling the world in search of her next great meal.
